I already had some celery so added that with a couple of onions, a few whole cloves of garlic (so that it was sweet rather than overpowering) and a teacup of red lentils.
After first frying the onions in olive oil........
.....I then added the chopped beetroot and carrots......
........followed by the celery and the lentils.
Then, after adding a handful of dried herbs, 3 tspns of vegetable bouillon and approx 2 pts of water........
.....I put the lid on and left it to simmer quietly for an hour.
Then the decision, to blitz or not to blitz?
I blitzed!
The taste was excellent (even if I do say so myself!!!!) so we decided to have it for our Sunday dinner with some wholemeal bread rolls that E made yesterday.
There was still plenty left so some will be travelling to work with me for lunch tomorrow and the rest will go in the freezer.

What lucky finds! This looks gorgeous! I am with you over the to blitz or not to blitz dilemma but like you, veer towards blitzing - I love the smoothness. The rolls look delicious too. Wish my vegetable patch could come up with anything as promising but soup from old artichoke heads doesn't quite have the same appeal!
ReplyDeleteSometimes we can plant things that are meant to be harvested July/Aug/Sept and not see a thing, so this was a lovely surprise and well worth waiting for :)

ReplyDeleteThank you!!! They were! I was expecting the soup to be quite a lot redder but it seemed to balance out with the carrots and celery to make a nice shade of deep orange.

The vegetables look great and the soup looks delicious, what a nice surprise. I have one leek from over twenty, I do not know how the chickens missed that one! I also have a few parsnips left, I must get using them.

ReplyDeleteWe found the cabbages and curly kale left over from last season that had been almost decimated by the pigeons are flourishing again, so we've been making the most of that before we clear the rest of the veg plot - an unexpected bonus too!
